Qubani Ka Mitha (Apricot Sweet)

  


Ingredients -


  • Dried apricots - 1/2 kg
  • Sugar - 1/4 kg
  • Water - 3 cups
  • Whipped Cream - 1 cup
  • Roohafza Sharbat - 1/2 cup



Procedure -


  • Soak apricots in three cups of water overnight. Remove the seeds from them. Crack open the seeds. Remove kernels and blanch them. 
  • Set aside kernels for garnishing.
  • Boil apricots using the same water in which they were soaked. 
  • Add sugar after ten minutes and continue to boil till sugar dissolves and it becomes thick in consistency. 
  • Remove from heat and cool slightly. 
  • Keeping aside some boiled apricots,and puree the rest. 
  • Simmer the puree with the reserved whole apricots.Keep aside to cool.
  • Then add the roohafza sharbat and mix well.
  • Now keep in the refrigerator to cool. 
  • Serve garnished with whipped cream and the apricot kernels.
